Milon Raihan Joypurhat Correspondent : 09 March 25 Artisans are busy making Lachcha Semai ahead of Eid. This semai is fried in palm oil and dalda. Depending on the type, semai is being sold in the market for 150 to 450 taka per kg. Good quality Lachcha Semai is being produced in factories in Joypurhat district. Large-scale work has been going on since 15 days before Ramadan. Bakery traders are mainly involved in making Joypurhat semai. There are 4 to 6 branded (wrapped) factories in the district. The rest are non-brand (open or in bamboo cages). Most of these non-brand factories are seasonal traders. Not only traders, most of the artisans make semai during the Eid season. They are engaged in other professions the rest of the time. This was said by an official of the Food Control Department.
Delicious laccha semai is being fried in hot oil that is sizzling. Every year, on Eid-ul-Fitr, laccha semai is prepared in factories from the beginning of Ramadan. To make delicious laccha semai, good quality flour is selected, a sack of flour is poured into the machine, water is mixed with the amount of flour, the dough for the yeast is mixed, then small pieces of yeast are cut with a knife, the dough is cut into balls and kneaded well. In the meantime, another dalda is prepared and the yeast dough is kneaded. The dough ball is broken into 8 to 10 pieces like cream. A few pairs of kneaded yeast are poured in and mixed and kneaded to make laccha semai. From the chicken, it is rolled two or three times in a separate pan, from there, in preparation for frying, it is pressed with the palm of the hand and released into the oil. This time, it is fried upside down and placed in a bent tin. After the oil drips off, the remaining pieces are arranged in bamboo baskets, then they are taken and weighed and sealed with a machine. This famous Lachcha Semai is being taken as a guest meal. This delicious Lachcha Semai has become popular among the people of Joypurhat and the northern region. The price of Semai in Joypurhat ranges from 150 to 450 taka, so even after a hundred years, Lachcha Semai factories are increasing at this time. Traders think that the sales will be worth lakhs of taka. There are Lachcha Semai factories scattered in five upazilas of Joypurhat district, and the craftsmen there are spending their time busy.

Md. Shaharia Ahmed, a resident of Sabuj Nagar in Joypurhat Sadar Upazila, said, “When we first come to Ramadan, we always see good quality lacchas in the market, but they are not available in the market. Anything that is dyed is harmful to the human body.”

Md. Noor Alam, a craftsman from Bogra district, said, “We work in many places where we mix colors, but in Joypurhat, in the Nana Lachcha Semai factory, we have been working for seven years. We do not mix colors in the factory. We make good quality lacchas with quality flour, number 1 Dalda Pure. We all work well together. We want others to work like us.

Mrs. Bogra Bakery, Nana Lachcha Semai, is a market in Joypurhat Kalai Upazila. Prof. Md. Shariful Islam said. We do not use any chemicals, we are BSTI approved, we do not use any colors, our Joypurhat Lachcha Semai is of good quality, colors are harmful to the human body, why would we mix it? You have children, you have children, we make Lachcha Semai by protecting their health, we hope to be fairly profitable this time compared to last year.

Sumaiya Afrin Jinia, Safe Food Officer, Joypurhat, told Daily Present Time, on the occasion of Ramadan, various traders in Joypurhat district pass Lachcha Semai every year in five upazilas, so many people probably do health guidelines, there will be aprons, hats, gloves, these, then make the Lachcha Semai and the oil they use should not be burnt oil, more food workers should be aware of this, and the owners will be more aware. We are monitoring more vigorously, if we find any irregularities, we will take action according to the law of the Safe Food Act 2018.

Lachcha Semai costs from 150 to 450 taka depending on the variety, so even after a hundred years, Lachcha Semai factories are increasing at this time. Traders expect sales to be worth millions of taka.
